How to store tofu (and can you freeze it?)
How to keep fresh tofu in the fridge once it's open, how long it lasts, and how to freeze tofu for a chewier texture.
Unopened tofu
Keep it in the fridge and use it by the date on the pack.
Opened tofu
- Put any leftover tofu in a clean container.
- Cover it completely with fresh, cold water.
- Seal the container and keep it in the fridge.
- Change the water every day, and use it within a few days.
If it smells sour, feels slimy or the water turns cloudy and thick, throw it away.
Can you freeze tofu?
Yes, and plenty of people freeze firm tofu on purpose. As the water inside freezes, it forms ice crystals that leave little pockets behind. Once thawed, the tofu is spongier and chewier, and soaks up marinades even better.
To freeze: drain the tofu, pat it dry, cut it into slices or cubes if you like, and freeze in a sealed bag or box.
To use: thaw it in the fridge overnight, then squeeze out the water (it comes out easily). Marinate, then fry or bake as usual.
Freezing doesn't suit silken tofu; it goes grainy.
Cooked tofu
Cool it quickly, keep it covered in the fridge and eat it within a couple of days.
